Blog Much.?

 
A Link to My >>>>>LAST BLOG<<<<         Okay, I know I've been Blogging alot lately but I really don't have much else to do.
I submitted my resumes to places that I might be able to work at, and a couple that I know is a stretch...
I applied for Unemployment. I did it wrong but I still did it.  For some odd reason, it didn't seem to click into my head that 52 weeks is actually a year until after I got home. Opps.
I've done multi loads of laundry, I've washed the dog,  I've hidden junk into the basement and
spending a insane amount of time learning about random junk on the internet that I find interesting,
 the Beginning of the week, I tried my first attempt at Refried beans that ended wonderfully. Yum!  The Pork and refried bean Quesadillas were great with Chipotle mayo.  I made a small batch of Perogies but the dough was a tad weird so they look extra funky but tasted amazing. The Bread was successful though as usual my John hates the flax.  I even made a healthy version of my Favorite meat Pie. I made a ton of Mini Ones and froze them for later Yummy Meals. I made the Crust with brown flour and flax... Again John wasn't very Happy about the flax. Though the weird thing about the day I made them. I started to Text John's parents, I was thinking of inviting them to supper thinking his mother would Enjoy them but I deleted the text after I started to describe what was in them...! I figured John's father wouldn't like them because of the large amount of healthy things in them. Carrots, spinach and flax.

                  One day I wasted a large amount of time soaking in the bathtub with a book and a can of Coke, But I did manage to Create a Yummy healthy supper!. Carribean Shrimp Rice Bowl. A creamy tomato based sauce with a hint of coconut and a flint of heat and mingling flavors of Lime and Mango.    
I've never had success with Cooking rice at home, it's always really Mushy. and well Im not really a fan of rice in the beginning but it gives something else to eat that is fairly cheap and not always potatoes. I tire of potatoes quit easily.   I've always just bought plain Brown Rice, the same as what my mother always made us eat when I was in my final years of High School. Since I'm not a big fan of it, I never serve it just plain jane. I always jazz it up. The last time I served Rice. I made it Mexican stylish.. Kidney beans, tomato, cumin. Yum.  On a side note. has anyone else noticed my insane addiction to Mexican foods.
Anyways. recently as I bought groceries, I stopped and looked at all the different types of Rices and decided since my rice never works well anyways, I'd try a new type. Still brown but I got basmati which claims its ideal for Curries. Anyways and it actually Cooked up right. it wasn't mushy, It wasn't hard and i didn't have to drain any water off. I was pretty excited. I almost just served it plain because I was So Happy.  ( I know happy bout Rice *shrugs*)

               The other day I attempted to make Tomato Paste. I know such a simple sounding thing. But I've never made it. I've always bought those little dinky cans of paste then frozen the amount I;ve never used.  But hey I got time and I'm not a fan of the preservatives that are in them so Hey Hoe! Lets Go! I googled and googled to great Lengths. Some are just tomatoes that have been peeled and seeded with salt. Some are whole tomatoes and onion and more salt. with a hint of lemon...  |
So I'm taking whole tomatoes chopped up. Sticking those bad boys in a Pot and setting it on 1. So it's Hott and you can see the steam and make the house smell like I'm making something amazing. But they don't Boil... now I let them Do that.... for at least eight hours.... That's it. I had to randomly stir. and evertually I stuck them into the blender and went to town on them. So they are smooth and not a single seed remains.. As they simmer, they should break down the skins that I left on and the color will darken and the tomato flavor will start to enhance as it thickens and thickens some more.    They Turned out Wonderful. I froze them in ice cube trays then moved them into a baggy. One is perfect amount to toss into anything!

I recently tried making Boston Baked beans. John's parents really enjoyed them and well I found them disgusting.  I may try a tomato based baked beans sometime but the first batch really put me off it. I always loved canned beans... But oh well.

    John invited a couple over. A guy he met at work and his women...  And you know me. I always seem to aim to impress.  So I've been trying to think of the perfect things to have set out.     My Mini Meat Pies with a marania dipping sauce, maybe cheese, meat with Crackers?  Carmel Corn...  I will wow them with my crazy awesome Foods... Hopefully.

I had to take my lovely computer into future shop yet again. they gave me a loaner. Two More times and they will give me a brand new computer. I look forward to it because my computer is driving me mad.
